With mashed cauliflower and green beans. Serve up a flavorful and colorful dish filled with the healthy benefits of salmon’s omega-3’s and proteins— and not to mention the cauliflower is rich in fiber and antioxidants.

Recipe provided by Chef Kevin Stacy of Laurelwood Assisted Living and Memory Care Senior Living.

BBQ Salmon Ingredients

  • Two 6 oz Salmon Fillets
  • 2 tsp mild chili powder
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 1 tsp crushed black pepper
  • 2 tsp granulated garlic
  • 4 oz BBQ sauce
  • 2 oz of olive oil

Salmon procedure: Start by putting oil into a non-stick sauté pan and placing it on medium high heat. While you are waiting for the pan to preheat combine all the spices in a small bowl. Rub spices on to both sides of the salmon. Once the oil starts to ripple it is hot enough. Place the salmon flesh side down in the pan.

Cook for approximately 5 minutes. Then flip the salmon over. Place 2 oz of barbecue sauce on each salmon fillet and continue to cook. After 5 minutes flip the salmon and cook another 2 minutes to caramelize the sauce. The salmon is done when it reads an internal temperature of 140.

Cauliflower Ingredients 

  • One head of cauliflower
  • 6 oz of grated parmesan
  • 6 oz of cream
  • 2 tsp salt 

Cauliflower procedure: Place a sauce pot with 3 quarts of water on high heat and bring to a boil. Break down cauliflower into florets. Once water comes to a boil add cauliflower and salt. Take cream and place it in a saucepan and bring to a simmer. Once cauliflower is fork tender remove it from heat and drain off water.

Mash the cauliflower completely then slowly stir in a third of the cream with half of the parm. Then another third of the cream and the rest of the parm. Slowly add just enough of the rest of the cream to get the consistency you are looking for.

Green Bean Ingredients 

  • ½ lb snapped green beans
  • ½ tsp of salt
  • One roasted red bell pepper cut into strips
  • 4 cloves of roasted garlic
  • 2 oz olive oil

Green bean procedure: Place a sauté-pan on medium high heat and heat the oil. While oil is heating up rinse green beans and pat dry. Once oil is hot place all the ingredients in the pan and sauté until cooked through.

Continue to cook until they are as done as you want them. Remember to keep them moving though so they don’t burn.
