Our Summer Pasta Salad includes healthy ingredients and makes a colorful, pretty accompaniment for your warm-weather meals. Recipe for Summer Pasta Salad provided by Callie Bird, Executive Chef at Independence Village of Avon. Summer Pasta Salad Ingredients: 8 oz. orecchiette pasta3 oz. olive oil1 1/2 oz. balsamic vinegar4 oz. bell pepper, sliced4 oz. zucchini, thinly sliced4 oz. cherry tomatoes, halved1 oz. scallions, thinly sliced3 oz. sliced pepperoni3 oz. kalamata olives2 oz. parmesan cheese4 oz. mozzarella cheese1 tbsp. parsley1 tsp. thyme Directions: Bring a large pot of salted water to a boil.Add pasta and cook until tender, 6-10 minutes.Drain pasta and rinse thoroughly under cold water. Set aside.In a mixing bowl, whisk the olive oil and balsamic vinegar together.Add bell pepper, zucchini, cherry tomatoes, scallions, pepperoni, kalamata olives, parmesan cheese,mozzarella cheese, parsley, and thyme to the mixing bowl. Stir to combine.Add pasta to the mixture and stir to combine all ingredients. Cover your Summer Pasta Salad and refrigerate for 30 minutes.Enjoy!
