Summer Pasta Salad

Ingredients:

There are countless pasta salad recipes, but this one will top your list once you make it and serve it! Our Summer Pasta Salad includes healthy ingredients and makes a colorful, pretty accompaniment for your warm-weather meals.
  • 8 oz. orecchiette pasta
  • 3 oz. olive oil
  • 1 1/2 oz. balsamic vinegar
  • 4 oz. bell pepper, sliced
  • 4 oz. zucchini, thinly sliced
  • 4 oz. cherry tomatoes, halved
  • 1 oz. scallions, thinly sliced
  • 3 oz. sliced pepperoni
  • 3 oz. kalamata olives
  • 2 oz. parmesan cheese
  • 4 oz. mozzarella cheese
  • 1 tbsp. parsley
  • 1 tsp. thyme

Directions:

  1. Bring a large pot of salted water to a boil.
  2. Add pasta and cook until tender, 6-10 minutes.
  3. Drain pasta and rinse thoroughly under cold water. Set aside.
  4. In a mixing bowl, whisk the olive oil and balsamic vinegar together.
  5. Add bell pepper, zucchini, cherry tomatoes, scallions, pepperoni, kalamata olives, parmesan cheese,
    mozzarella cheese, parsley, and thyme to the mixing bowl. Stir to combine.
  6. Add pasta to the mixture and stir to combine all ingredients. Cover your Summer Pasta Salad and refrigerate for 30 minutes.
  7. Enjoy!
