Enjoy this delicious goat cheese flatbread as an appetizer or main course. Either way, you’ll satisfy that pizza craving with a lighter option using healthy ingredients. Created by Chef Melissa Jones, Director of Dining Services at Demaree Crossing.

Ingredients:

  • 1/2 pizza dough (make your own or use store bought)
  • 2 tablespoons olive oil
  • 3 large onions, sliced
  • 2 cups mozzarella cheese, shredded
  • 1/4 cup sun-dried tomatoes in oil, chopped
  • 1 cup marinated artichokes, chopped
  • 1 cup goat cheese, crumbled
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon pepper or to taste
  • 1 tablespoon parsley for garnish

Directions:

  1. Preheat oven to 500°F.
  2. Heat the oil in a skillet and add sliced onions. Slowly cook the onions until they are caramelized. It should take about 15 minutes.
  3. Roll out the pizza dough and place on an oiled pizza baking pan, pizza stone, or even a baking cookie sheet.
  4. Arrange caramelized onions over the rolled-out pizza crust. Top with shredded mozzarella cheese, followed by sun-dried tomatoes, artichokes, and finally crumbled goat cheese. Season with salt and pepper and bake for about 10 to 12 minutes or until cheese is bubbly and crust is golden brown.
  5. Garnish with parsley and serve.
