When pumpkin has its 15 minutes of fame each year, you’ll find pumpkin spice-flavored everything; from coffee to tortilla chips and even Kraft mac and cheese – everywhere you look!

If you’re not a big fan of pumpkin spice, you may have been turned off of all manner of pumpkin. That’s a shame because this large orange gourd, which has been around for 5,000 years and helped sustain the colonists when they struggled with European crops, has so many benefits! It’s low in calories, fat and sodium, and is also a great source of fiber, Vitamins A and B, potassium, protein and iron. Plus, you can cook it up in some pretty tasty ways!

Below we’ve provided a few interesting pumpkin recipes to help add this nutritious fruit to your diet all year ’round.
